Ingredients

  • Bacon
  • Eggs (yolks)
  • Parmesan
  • Black pepper

Method

  1. Cook the spaghetti in salted water until al dente and reserve a cup of the pasta water.
  2. Cut the bacon into smaller pieces and fry it until crisp.
  3. In a bowl, combine the egg yolks, grated parmesan, and freshly ground black pepper.
  4. Add the cooked spaghetti to the bacon and toss briefly away from strong direct heat.
  5. Add the egg and cheese mixture and stir quickly. Add a little pasta water as needed to create a creamy sauce.
  6. Season with salt and black pepper, add a little more parmesan, and serve immediately.
