Method
- Soak the day-old bread in milk, let it soften, then gently squeeze out the excess liquid.
- In a bowl, mix the ground beef and pork with the bread, egg, chopped parsley, parmesan, salt, and black pepper.
- Shape the mixture into smaller meatballs.
- Sear them briefly in a pan on all sides until lightly browned.
- Add tomato paste, cook it briefly, then pour in the chopped tomatoes and stock.
- Let the meatballs simmer slowly in the tomato sauce until juicy and the sauce has reduced.
- Cook the polenta in stock according to the package instructions until soft, then finish with butter and a little parmesan.
- Spread the buttery polenta on a plate, add the meatballs with sauce, and finish with parmesan and Pink Greens microgreens.
