Ingredients

  • Dough:
  • 90 ml milk
  • 15 g yeast
  • 18 g sugar
  • 200 g flour
  • 1 egg yolk
  • 25 g butter
  • Filling:
  • Plum jam
  • Vanilla sauce:
  • 2 egg yolks
  • 80 ml whipping cream
  • Vanilla paste
  • Orange zest
  • To finish:
  • Poppy seeds
  • Powdered sugar

Method

  1. Add yeast and sugar to lukewarm milk. Let it activate for a few minutes.
  2. Add flour, egg yolk, and melted butter. Work into a soft dough and let it rise.
  3. Divide the dough into pieces, fill with plum jam, and shape into dumplings.
  4. Let the Germknödel rise a little longer, then steam for about 20 minutes.
  5. For the sauce, mix egg yolks, cream, vanilla paste, and orange zest. Warm gently until thickened.
  6. Serve the finished Germknödel with vanilla sauce, poppy seeds, and powdered sugar.
