Profile

White mustard is a lively microgreen with more edge than cabbage varieties, yet it stays gentler than aggressively spicy mustards. It has a fresh brassica profile with a lightly peppery finish, which makes it feel energetic and clean.

It is excellent whenever you want to add contrast to delicate, creamy, or richer dishes without overwhelming the whole plate.

🪴 Growing Method

  1. Sowing
    Sow densely into a shallow tray with fine substrate or onto a grow mat, then press the seeds gently onto the surface.
  2. First moisture
    Mist lightly after sowing. Keep the substrate evenly moist, ideally with gentle misting or bottom watering.
  3. Dark germination phase
    Keep the tray covered in the dark for the first 4 to 5 days. This helps the microgreens root better and develop more even, stronger growth.
  4. Light
    After uncovering, move the mustard to a bright spot and continue keeping the substrate moist, not waterlogged.
  5. Harvest
    White mustard is usually ready in about 7 to 10 days, once the leaves are fresh and the flavor has developed a clear mustard edge.

How to Use It in the Kitchen
