Method
- Rinse the jasmine rice and cook according to the package instructions. Let it rest briefly with the lid on, then fluff with a fork.
- Mix the dark and light soy sauces with honey, lime juice, and crushed garlic.
- Pat the chicken dry, coat it in cornstarch, and gently shake off the excess.
- Heat sunflower oil in a pan and fry the coated chicken until golden on all sides and fully cooked through.
- Reduce the heat and add the soy-honey mixture. Turn and baste the chicken over gentle heat until coated in a glossy glaze.
- Serve with jasmine rice and finish with sliced spring onion and sesame seeds.

Add the glaze towards the end and reduce it over gentle heat so the honey does not burn. Use lime juice to balance the sweetness of the honey and the saltiness of the soy sauces.
